Serve over a whole grain and remember that 1/2 cup of noodles, 1/3 brown rice or 1/4 quinoa is one serving and many people eat two to three times this quantity in a single meal. Balance out your plate with a colorful vegetables such as Italian green beans or roasted carrots.
1 pound lean ground turkey
1/4 pound turkey sausage
1 cup diced celery
1 cup shredded carrots
1 cup diced red onion
1/2 cup panko bread crumbs
1/3 cup freshly grated parmigano-reggiano cheese
2 teaspoons fresh garlic
1 teaspoon oregano
1 teaspoon basil
1/2 tsp. sea salt
1/2 tsp. pepper
Extra virgin olive oil for cooking
- Combine all ingredients except for olive oil. Mix gently and form 12 balls. Over handling will cause the meatballs to become too dense and tough. Form 12 meatballs.
- Cook meatballs on low heat in extra virgin olive oil or your favorite pasta sauce. Cook covered for 30 minutes, turning every 5 minutes.
